There is a test for whether a restaurant AI platform has built something defensible or whether they have built a wrapper.
Ask them: if OpenAI shuts down tomorrow, what happens to your product?

Strip the branding from the majority of restaurant AI upstarts and you find the same architecture:
Step one: Connect to your POS, your scheduling system, your reservation platform. Ingest structured operational data. This is a set of API integrations. Any engineer builds this in a few weeks.
Step two: Format that data and pass it to a frontier model — GPT-4, Claude, Gemini — with a system prompt that says something like: You are an expert restaurant operations advisor. Here is the operational data. Identify issues and surface recommendations.
Step three: Return the output to a dashboard. Add a restaurant-flavored UI. Give it a name like Autonomous Intelligence or AI Brain or Operations Copilot.
That is the architecture. Three steps. Any engineer who has built an LLM application has built this. The time to replicate it — not the business, not the integrations, not the customer relationships, but the core intelligence layer — is a weekend.
The System Prompt Is the IP
When a restaurant AI platform claims proprietary intelligence, ask them to be specific. In most cases, the proprietary element is their system prompt — the set of instructions they pass to the frontier model that shapes how it responds.
